Fried Potato Latkes Recipe

Potato Latkes are a yummy dish to serve during Hanukkah or when teaching your children about the Jewish traditions which Jesus’ family observed. Give this fried potato latkes recipe a try and let us know what you think.
Ingredients:
2 1/2 pounds baking potatoes, peeled
1 large onion
3 large eggs, lightly beaten
1 teaspoon salt, or to taste
1/8 teaspoon black pepper, fresh ground, or to taste
1/4 cup matzo meal or 2 tablespoon unbleached all-purpose flour
Vegetable oil, for frying
Instructions:
Alternate grating the potatoes with the onions. This keeps the potatoes from turning dark. Squeeze the excess liquid from the potato and onion shreds. Mix in the eggs, salt, pepper and meal. Let the mixture rest for about 5 minutes so or until the mixture has dried a bit.
In a large skillet, pour in oil so that it is about 1/8- to 1/4-inch deep. Heat over a medium heat until it is very hot. Form each latke, by using a large spoon to transfer some of the potato mixture to the oil. Flatten each addition slightly with the back of a spoon. Continue making latkes until the skillet is full, with a little room around each latke.
Fry the latkes until they are well browned on both sides and crisp around the edges. Drain them well on paper towels. Repeat the process until all the latkes are fried.
You can make latkes up to eight hours ahead of time and reheat them, but for the best taste and texture they should be served promptly. Serve hot with applesauce.
