Ingredients:
2 zucchini squash, sliced
12 oz. tomato sauce
3 C Rigatoni
6 oz. Mozzarella cheese, sliced
1 tsp. olive oil
Handful of shredded cheese
Instructions:
- Cook pasta according to package instruction, then set aside.
- Preheat oven to 350 F.
- In a small saucepan, bring 2-3 cups of water to a boil.
- Add zucchini and cook until tender and drain.
- In a greased baking dish, layer 1/3 of the Rigatoni, tomato sauce, cheese and zucchini. Continue for three layers.
- Cover with shredded cheese and add a sprinkle of olive oil.
- Bake in the oven at 350 F. for about 30 minutes or until cheese is melted.
