Valentines Honey-Do Fruit Salad

Fruit salad is one of the easiest dishes a child can make. It is also one of the most romantic dishes a couple can share. Keep your kids and your spouse happy by adding this Valentines Honey-Do Fruit Salad to your holiday family menu.
Ingredients:
½ C. honey
¼ C. frozen, limeade concentrate, thawed
1 C. strawberries, cut into chunks
1 C. kiwi, cut into chunks
1 C. melon (cantaloupe, watermelon, or honeydew) cut into chunks
1 C. grapes, whole or cut in half
¼ C. pecan bits, toasted
Instructions:
In a medium bowl, mix honey and limeade concentrate. Add fruit and toss gently, so the tender fruit chunks don’t get bruised. Sprinkle the top with pecan bits. Chill in refrigerator. Serve in individual dessert bowls or in one large bowl and allow self-serving. This healthy dish is a good choice for everyone in the family. Kids love preparing and eating it. The salad is also nice when served after a romantic meal. Just add your imagination.
Variation: To give this dish more of a Valentine feel, add ½ C. heart shaped mini-marshmallows.
More Than Cooking Lessons:
- If you have children helping with this dish, you may want to cut up the fruit and let the kids move the chunks from the side of the cutting board to the measuring cup.
- Kids can count the number of fruit chunks that make up the measurement you need for the recipe. For example, 10 chunks of strawberries make a cup, 8 chunks of melon make a cup, etc.
- This is a great time to talk about fruit colors, textures, sizes, seeds, etc.
- To take advantage of the “Honey do” aspect with kids, you can change the “honey do this” meaning to incorporate questions about fruit or Valentine’s Day. For example, you could ask questions such as “Honey, do you know what colors are associated with Valentine’s Day? Honey, do you know 3 things that are Valentine’s Day symbols?”
